How to Prepare Your Oven
Pre-heat your oven to 200 C (or 390 F) on convection (with the circulation).
How to Prepare Your Chicken Wings
Thaw your chicken wings.
Pat them dry with paper towel.
Place the dried chicken wings on an over-safe tray with an aluminum foil (or a disposable aluminum tray).
Brush both side of your wings with a thin layer of olive oil.
Put aside.
How to Prepare Your Wings Sauce
Only start this at the 30 minute-mark of baking the wings!
Grab a medium sized bowl (to hold the sauce mix & the egg yolk).
Extract the yolk from the egg whites. You can use a strainer, or separate the egg yolk with a plastic water bottle suction.
Place the yolk in the medium sized bowl & scramble it. Then put it aside.
On a small pan, melt 1-2 tablespoons of butter.
Once melted, add your desired amount of Buffalo Wild Wings Sauce into the pan. (e.g. add enough sauce to coat all of your wings)
Stir the butter & the sauce in the pan until it simmers.
Pour half of the pan’s sauce into your medium sized bowl (with the scrambled yolk).
Stir the wings sauce in the medium sized bowl. Stir, stir.
This should take about 10 minutes - just in time for the wings to come out of the oven.
Put aside.
Let’s Cook!
If you haven’t done so already, pre-heat oven to 200 C (390 F) on convection.
After pre-heating, add the tray of thawed & dry chicken wings (coated with a light layer of olive oil) into the oven.
Place the tray in the middle rack.
Bake the wings in the oven for 40 minutes, in total.
Rotate the wings at the halfway mark (20 minute-mark).
At the 30-minute mark, start preparing your wing sauce.
At the 40-minute mark, temporarily take the wings out. Place the tray(s) on a cooling rack or corkboards.
One-by-one, dip both sides of the nearly-cooked wings into the medium bowl’s mix.
Place the wings back to the tray - for the final broil.
Set the oven to broil at 220 C (425 F)
Return the tray of coated wings into the oven.
Let it broil for 3 minutes.
Once done, distribute the coated wings to your plate(s).
Brush the remaining sauce from the medium sized bowl over your wings.
Bon appêtit!
